Curt’s Salty Toffee Cookie Bars

I LOVE to bake. I am whipping something up with butter and sugar in the kitchen at least once a week. A few weeks ago, I went to a friend’s birthday party (hey Curt) and created an amazing, ooey-gooey, melt-in-your-mouth, salty + sweet treat.

Here’s the recipe for Curt’s Salty Toffee Cookie Bars:

  • 1 - 3/4 cups all-purpose flour

  • 1 cup oats

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 cup salted butter (2 sticks), softened

  • 3/4 cup granulated sugar

  • 3/4 cup light brown sugar packed

  • 1 - 1/2 tsp vanilla extract

  • 2 eggs (room temperature)

  • 1 - 1/2 cup Heath Toffee Bits

  • 1 - 1/2 cup chocolate chips (I like to mix semi-sweet, dark, and milk)

  • 1/2 cup crushed pretzels

  • Maldon sea salt flakes for sprinkling

Preheat your oven to 375. Stir together flour, baking soda, and salt with a fork or whisk in a medium bowl. Beat butter, granulated sugar, brown sugar, and vanilla in a large bowl until well blended and fluffy. Add eggs one at a time and mix well. Add flour mixture about 1/2 cup at a time, mixing well. Stir in toffee bits, oats, and chocolate chips, saving about 1/3 cup of chocolate chips and toffee bits for the top. Add the mixture to a greased or parchment-lined 8x8 baking pan. Cover the top with the remaining chocolate chips, toffee bits, and crushed pretzels. Bake for ~40 mins. As soon as it comes out of the oven, sprinkle with Maldon Sea Salt. It has to be Maldon, I’m sorry, I don’t make the rules here. Actually, it’s my recipe so I guess I do... It must be Maldon. For Curt’s birthday, I also added some chocolate sprinkles and swirly candles, those are optional but fun.
