Summer recipes!

I’ve got 2 fun summer recipes for you today: Lemony Pesto and Aperol Spritz Slushes!

Lemony Pesto

I love pesto because despite what any purist might say about pine nuts and basil… pesto is soooo versatile! This recipe was adapted from Half Baked Harvest (my fave food blogger) because I felt like it, and never have pine nuts.

  • 2 cups of greens, I did 1 cup lemon basil and 1 cup kale from the garden

  • 1/4 cup olive oil

  • Juice + zest of 1 lemon

  • 1/3 cup parmesan

  • 2 heaping tablespoons of cashews (but you can use any nuts you have around… I’ve used toasted almonds and pistachios, walnuts, etc.)

  • Pinch of red pepper flakes

Combine all ingredients in a food processor or blender and blend to desired consistency! I went a little crazy on the blending here, so it’s like a pesto spread, but delicious on sourdough toast with honey and crushed black pepper. You can put it on pasta, sandwiches, anything your little lemony heart desires.


Next up:

Aperol Spritz Slushes, again, purists beware!! We love Aperol Spritz in the summer. It’s such a perfect drink: sweet, bitter, tart, boozy, delicious.

This one is so simple. Equal parts Aperol and orange juice (I started with 2 cups each)… freeze. Overnight is best. Scoop some of that frozen goodness into a wine glass about halfway, top with champagne (or just white wine), and stir. Cheers.
